"Having enjoyed Mark’s food at The Horse Guards on a number of occasions, I was interested to see how his remarkable skills as a restaurant chef would translate to the first supper club at Springfield Gardens. It was a revelation. The food was absolutely delicious and beautifully presented in spite of the constraints which must have come from working in an unfamiliar kitchen and serving, as I understand it, more than fifty hungry diners at once. This was no ordinary supper club. It was an opportunity to savour food that showcased an extraordinary talent in a relaxed and informal environment."
Such a talented chef. Mark's creations are stunning and absolutely delicious. I love that Mark uses seasonal and locally foraged foods in his work. He has an eye for detail and a distinguished palate. Highly recommend.
